Sacrosanto
Vin Santo is one of the most ancient and evocative symbols of Tuscan tradition. Typically made from white grapes like Trebbiano and Malvasia, the bunches are carefully hand-harvested and left to dry slowly on racks or hung in ventilated rooms for several months, concentrating their sugars and aromas. After gentle pressing, the must ferments and ages for years in small oak barrels called Caratelli, often sealed and stored in attics where temperature swings enrich the wine’s character.
The result is a deeply amber-colored wine, with complex notes of dried fruit, honey, almond, apricot, vanilla, and toasted wood. Sweet but never heavy, it is beautifully balanced and long-lasting on the palate.
Historically, Vin Santo was not only offered to guests as a sign of hospitality and respect, but also used during Mass, due to its sacred connotation and purity. It was – and still is – a wine of tradition, ceremony, and reverence.
Today, it continues to honor that legacy, whether paired with cantucci, blue cheese, dry pastries, or simply sipped slowly, in quiet reflection or good company.
